Bashiok gave some hints as to dungeons will vary aesthetically depending upon their level of importance to the storyline. This also made it harder for leaving the dungeon near death and then going back in after you were fully healed just to run to where you left off.

This made for better loot options and for a more dramatic experience in my mind. A cave crawling with goblins shouldn't just have say 53 goblins in there and once those are gone then bam... No more goblins.

I personally liked the previous Blizzcon demos given where enviromental attributes were given but, as with everyone else, I believe they are going the wrong way with the art style. NOT that it is too bright but that it looks the exact same to most of the WC3 dungeon crawler missions. And to be quite honest, I would like them to spice it up instead of just using the same engine over and over again... (I imagine they will probably use a close engine to WoW when they release the new MMO too... But that's an entirely different story all-together)

Not really, worried about themes as they usually go from the incredibly realistic to the incredibly bizzare (we've seen this is true in almost all the WoW content).

Overall I think that D3 will be a game worth getting hyped for as long as they don't try some asshat moves toward the end of development... (Bnet charges, trying to call it an MMO, putting some weird PVP aspect in or ffs trying to call it an E-Sport based on how fast you can get through a dungeon.)

One last note, I really hope they do open it up to the modders, though I am starting to have my doubts that they even are thinking about that as of right now. Specifically I hope they allow for a modder to make their own version of LAN so we can freaking play it at LAN parties, some of us don't have fiberoptics to run 20 connections to Bnet at once BLIZZ!
